- 4tablespoons (approximate) de chicken marinade liquid
- 3whole de egg white
- vegetable oil
Instructions
In 1 liter of water, squeeze the juice from three limes. Combine this blended water with seasonings: mayonnaise, onion powder, garlic powder, hot paprika, salt, MSG, ground black pepper, and sugar.
Pour this seasoning mixture over 2 kg of chicken drumettes/wingettes and let it marinate in the refrigerator for a minimum of 4 hours, ideally overnight.
Dica: The longer it marinates, the better the flavor.
Prepare the breading crust by mixing 500g of all-purpose flour with cornstarch, potato starch, rice flour, salt, onion powder, garlic powder, hot paprika, black pepper, and MSG.
Add approximately four tablespoons of the chicken marinade liquid to the flour mixture while whisking, to create small, crispier bits in the final breading.
Dica: This step is crucial for guaranteeing crispier and better-looking bits in the breading.
Drain the marinated chicken, discarding the remaining liquid; it should only be lightly coated with the seasoning.

Whisk three egg whites and mix them with the chicken to increase flour adherence.

Dredge the chicken pieces in the seasoned flour and let them rest for about two minutes before frying.

Heat the vegetable oil to 365ºF (185ºC) and fry the chicken for approximately 8 minutes, until it is deeply golden brown and floating, or has an internal temperature between 163ºF and 172ºF.
Dica: Check the internal temperature if preferred.
Serve the fried chicken with lime and, optionally, a dipping sauce of your choice.
