An easy and quick recipe for rice fritters made with leftover rice and shredded short ribs, perfect as an appetizer.

Ingredients
- 2cup de Cooked rice
- 1teacup de Shredded short rib meat
- 50g de Grated cheese
- to taste de Parsley
- to taste de Chives
- 1/4unit de Onion
- to taste de Black pepperSubstitui por: coentro (opcional)
- to taste (a little) de Salt
- 1unit de Egg
- 3tablespoon de All-purpose flour
- for frying de Vegetable oil
Instructions
Finely chop the parsley, chives, and ¼ of the onion into very small pieces.
Dica: If you prefer, the onion can be grated. Parsley and chives add color and flavor to the fritters.
In a bowl, combine the cooked rice, shredded short rib meat, and grated cheese.
Dica: The rice doesn't have to be leftover; it can be cooked specifically for the recipe.
Add the chopped ingredients (parsley, chives, and onion) to the rice and short rib mixture.
Add one egg, black pepper, and a pinch of salt to the batter, mixing well.
Dica: Use little salt, as the short ribs and rice may already be salty enough. Taste before adding more.
Add 2 to 3 tablespoons of all-purpose flour to help bind the mixture.
Dica: If the rice is softer, the mixture will bind better.
Work the mixture with your hands until it has enough consistency to roll into balls.
Dica: If you prefer not to feel the grains, you can process the rice, but the fritters will be more paste-like.
Lightly dampen your hands with water (not oil) and shape the mixture into small balls or your desired shape.
Dica: If you don't want to fry all the fritters immediately, they can be stored raw in the refrigerator for up to two days.
Heat oil in a pan over medium heat and perform the toothpick test to check for the ideal temperature (the toothpick should bubble when inserted).
Dica: Oil that is too hot will burn the outside and leave the inside raw; oil that is too cold will soak the fritter and may cause it to burst.
Fry the fritters in batches, stirring gently at first so they don't stick, until they are golden brown.
Dica: The frying process is quick, allowing you to finish the fritters in under 20 minutes total.
Remove the fried fritters with a slotted spoon and place them on paper towels to drain excess oil.
Dica: The fritters turn out very dry if fried at the correct temperature.
