Ingredients
- Salt Cod (Bacalhau)
- Olive Oil
- Potatoes
- Bell Pepper
- Onion
- Garlic
- Olives
- Hard-boiled Egg
- Parsley
Instructions
Bring water to a boil.
Generously grease a baking dish with olive oil.
Blanch the salt cod in the boiling water until it starts to turn whitish and the flakes separate slightly.
Remove the salt cod from the water immediately and place it in the baking dish over the olive oil.
Use the salt cod cooking water to boil the potatoes, bell peppers, onions, and garlic.
Drain the cooked vegetables and arrange them in the baking dish alongside the salt cod.
Preheat the oven to 350°F (180°C) and bake the mixture for 20 minutes.
Remove the baking dish from the oven, add the olives and the pre-boiled eggs, and drizzle everything with a little more olive oil.
Return to the oven for another 10 minutes.
Finish by sprinkling chopped parsley over the dish before serving.
