Ingredients
- Chicken wings
- Frying fat/oil
- All-purpose flour
- Breadcrumbs
- Cornstarch
- Spicy paprika
- Turmeric
- Salt
- Pepper
Instructions
Prepare the dredging mixture by combining all-purpose flour, breadcrumbs, cornstarch, spicy paprika, and turmeric.
Season the chicken wings with a pre-mixed combination of salt and pepper.
Toss the seasoned chicken with the flour mixture until completely coated.
Heat the frying fat/oil to a slightly lower/cooler temperature than usual.
Fry the chicken wings in the oil that is not yet very hot until they become slightly syrupy/gooey (par-cooking). Remove them from the oil at this point.
Dica: This step serves to partially cook the meat.
Coat the par-fried wings again in the dry ingredient mixture.
Fry all the wings a second time in hot oil until they are deeply golden brown and crispy.
Dica: They should come out dry and golden.
Serve immediately, enjoying the juiciness and crispiness of the wings.
