Ingredients
- 3tablespoons de Cocoa powder
- 395g de Sweetened condensed milk
- 200g de Heavy cream
Instructions
With the heat off, add the cocoa powder and sweetened condensed milk to the saucepan.
Dica: Mix very well until all the cocoa powder is dissolved and disappears into the mixture.
Add the heavy cream to the rest of the ingredients in the saucepan.
Turn on the heat (medium-low) and stir continuously until the mixture thickens and starts to boil.
Dica: It is crucial not to stop stirring to prevent the sauce from sticking or burning on the bottom of the pan.
If you desire a thin sauce (for ice cream or pancakes), turn off the heat as soon as it comes to a boil and let it cool slightly.
Dica: This is stage one of the sauce.
For cake frosting (stage two), continue cooking until, when drawing a path with a spatula, the sauce momentarily separates (creating a 'trail') before quickly coming back together.
Dica: This stage allows the frosting to be spreadable on the cake.
For a fudge-like consistency (stage three), cook until, when tracing a path with the spatula, the sauce takes about five seconds to rejoin.
Dica: This stage is firmer.
When you reach the desired consistency for cake frosting, turn off the heat.
After turning off the heat, continue stirring the sauce in the pan for at least 2 minutes.
Dica: This rest off the heat adds creaminess and ensures the ideal cooling temperature for use on the cake.
