- 1kg de Chicken thighs and drumsticks
- 1teaspoon de Lemon and pepper seasoning
- 1teaspoon de Smoked (or sweet) paprika
- 1/41/4 teaspoon de Black pepper
- 2tablespoons de Mustard
- 2tablespoons de Soy sauce
- 1teaspoon de Salt
- 1sprig de Thyme (sprig)
- 1unit de Lime juice
- 1heaping tablespoon de Mayonnaise
- 1unit de Bode pepper (or similar hot chili)
- 1unit de Onion
- unit de Garlic (clove)
- 1small carton de Heavy cream
Instructions
Cut the large potatoes in half in a cross-hatch pattern and arrange them in a baking dish.
Dica: Be generous with the amount of potatoes; they are a favorite at the cook's house.
Cut the chicken thighs/drumsticks, if necessary, and distribute them along with the potatoes in the baking dish.
Dica: The thigh/drumstick piece can be halved.
Mix the seasonings: lemon and pepper seasoning, paprika (smoked or sweet), black pepper (to taste, start with a pinch), mustard, soy sauce, mayonnaise, and salt.
Dica: For the black pepper, start with just a pinch if you are not used to using a lot.
Season the chicken and potatoes well with the prepared mixture, ensuring the seasoning spreads evenly.
Dica: Mix everything very well so the chicken absorbs all the flavor.
Add the aromatics: place the halved bode pepper (or hot chili), the onion cut into quarters (separating the petals), and the red bell pepper, scattering them over the chicken.
Dica: Separate the onion petals to release the aroma better.
Add the sprig of thyme and the cherry tomatoes (to taste) to the baking dish to flavor the dish.
Squeeze the juice of one lime over the entire preparation.
The secret: place one peeled garlic clove under the skin of each piece of chicken.

Pour one small carton of heavy cream over the chicken, spreading it uniformly over the surface.
Dica: This is the secret to the final texture of the chicken.
Place the baking dish in a preheated oven at 350°F (180ºC) to roast for 50 minutes.
