A recipe for a very fluffy carrot cake, easy to make in a blender, finished with a spectacular crunchy chocolate frosting.

Ingredients
- 4 de Eggs
- 1cup de Oil
- 2cup de Carrots (chopped)
- 2cup de All-purpose flour
- 1,5tablespoon de Baking powder
- 3cup de Granulated sugarSubstitui por: cristal, demerara
- 1/4cup de Unsalted butter
- 1/4cup de Milk
- 1cup de Chocolate drink mix (e.g., Nesquik powder)
Instructions
In the blender, add the eggs, granulated sugar, oil, and the previously chopped and peeled carrots.
Dica: The carrot should be chopped to facilitate measuring and blending.
Blend the liquid mixture in the blender for about 5 minutes until completely smooth.
Transfer the contents of the blender to a mixing bowl.
Add the all-purpose flour and baking powder to the mixture in the bowl.
Dica: Mix slightly before blending again to incorporate.
Quickly mix the batter (you can use the blender again, as suggested by the video, but a light hand mix is sufficient) for one minute.
Dica: Mix just enough after adding the flour.
Pour the batter into a greased and floured baking pan, measuring 10x10 inches with a 2.5-inch height.
Bake the cake in a preheated oven at 340°F (if using an electric oven with top and bottom elements) or 350°F (conventional).
Dica: Baking time varies, but it should bake until a toothpick inserted comes out dry and clean.
While the cake cools for about 30 minutes (it should be warm), prepare the frosting.
Dica: The cake can be eaten warm or with the frosting.
For the glaze, mix the remaining sugar (1 cup), butter (1/4 cup or 50g), milk (1/4 cup or 50ml), and chocolate drink mix (1 cup) in a saucepan.
Dica: The butter used is unsalted.
Bring the frosting mixture to a boil over high heat, then reduce the heat to medium and stir continuously.
Dica: Cook the glaze for 3 minutes over medium heat until it reaches the consistency of soft fudge (brigadeiro mole).
Check the consistency of the glaze: it should have the texture of soft fudge, and when poured over itself, the line should gently disappear.
Dica: If the heat is higher, cook for only 2 minutes.
Pour the warm glaze over the warm/cool cake and let it cool completely until the frosting forms a very crisp shell.
Dica: The crunchiness is ideal when the surface is very dry to the touch.
