Gratinéed salt cod is a classic holiday dish, creamy and flavorful, made with salt cod, potatoes, and a delicious béchamel sauce.

Ingredients
- 3units de Onion
- Olive Oil
- Salt
- 6cloves de Garlic
- 1/2cup de Pitted Black Olives
- 1/2glass de Dry White Wine
- 1kg de Small Potatoes
- Black Pepper
- Parsley
- Green Onion (Scallion)
- 3fillets de Salt Cod
- 1liter de Milk
- 25grams de Butter
- 25grams de All-Purpose Flour
- Nutmeg
- 1unit de Egg Yolk
- 2units de Cornbread
Instructions
Sauté the onion, garlic, and black olives in olive oil in a skillet
Add dry white wine and season with salt and black pepper, set aside
Boil the small potatoes and mash them in a skillet with olive oil
Season the potatoes with salt and black pepper and allow them to toast
Cook the salt cod in milk with herbs and spices
Make a béchamel sauce using the milk from cooking the salt cod and stir in the egg yolk
Spoon the béchamel sauce over the salt cod and top with crumbled cornbread and olive oil
Bake in the oven until golden brown
