Recipe for a moist chocolate cake, made without a mixer, finished with a hot glaze and ganache.

Ingredients
- 3units de Eggs
- 1,5cup de Sugar
- 2cup de All-purpose flour
- 1pinch de Salt
- 1tablespoon de Baking powder
- 1/2cup de Oil
- 1cup de Cocoa powder (50% Cacao)
- 1cup de Hot coffee (unsweetened/bitter)
- Margarine (for greasing)
- Chocolate or Chocolate Drink Mix (for dusting)
- 1cup de Milk
- 1small smear (small amount) de Margarine (for glaze)
- 2heaping tablespoons de Cocoa powder (for glaze)
- 1small bar (to taste) de Chocolate bar (for ganache)
- 1/2small carton de Heavy cream
Instructions
Grease a baking pan with margarine and dust it with cocoa powder or chocolate drink mix, set aside.
In a bowl, add the eggs and sugar, mixing well by hand.
Dica: It is not necessary to use a mixer.
Incorporate the oil into the egg and sugar mixture.
Sift the cocoa powder (50% cacao) over the mixture, adding the pinch of salt.
Dica: Salt enhances the flavor of the cake.
Add the cup of hot, unsweetened coffee to the batter.
Sift the two cups of all-purpose flour over the batter and mix well until combined.
Dica: The batter should be quite thin.
Add one tablespoon of baking powder and mix gently.
Pour the batter into the greased pan and bake in a preheated oven at approximately 350°F (adjust according to your oven), for about 40 minutes.
Dica: The cake is ready when a toothpick inserted comes out clean.
While the cake bakes, prepare the glaze by mixing one cup of milk, a small amount of margarine, and two tablespoons of cocoa powder. Heat on the stove until it boils.
Remove the cake from the oven. Poke holes in the surface of the cake with a toothpick or knife so the glaze can penetrate better.
Dica: The holes help the cake absorb the glaze.
Pour the hot glaze over the poked cake.
Prepare the ganache by melting a small chocolate bar with half a small carton of heavy cream in the microwave (in 20-second pulses).
Dica: Dark chocolate helps balance the sweetness of the cake.
Cover the moist cake with the chocolate ganache.
