Ingredients
- 3units de Egg
- 1,5cup de Sugar
- 2cup de All-purpose flour
- 1pinch de Salt
- 1tablespoon de Baking powder
- 1/2cup de Vegetable oil
- 1cup de Cocoa powder (50% cacao)Substitui por: achocolatado
- 1cup de Strong (bitter) coffee
- 1small amount de Margarine (for greasing and glaze)
- Cocoa powder/Chocolate drink mix (for dusting)
- 1cup de Milk
- 2heaping tablespoons de Cocoa powder/Chocolate drink mix (for glaze)
- 1/2small bar de Baking chocolate (semi-sweet)
- 1/2small carton de Heavy cream
- Sprinkles opcional
Instructions
In a large bowl, whisk the three eggs and one and a half cups of sugar together, mixing manually with a whisk or spoon.
Dica: There is no need to use a mixer or blender.
Add half a cup of oil to the egg and sugar mixture and continue mixing.
Sift one cup of cocoa powder (50% cacao) over the batter to prevent lumps.
Dica: Sifting the cocoa powder helps it dissolve better into the batter.
Add a pinch of salt and then the two cups of all-purpose flour (already sifted) to the mixture.
Dica: Salt is important to enhance the cake's flavor.
Incorporate one cup of hot, strong (bitter) coffee into the batter, mixing until you achieve a very liquid consistency.
Dica: The coffee should be hot to aid the batter's process.
Add one tablespoon of baking powder, gently mixing until uniformly incorporated.
Pour the batter into a 30x20 cm pan that has been previously greased with margarine and dusted with cocoa powder or chocolate mix.
Dica: The pan can be round or Bundt style.
Bake in a preheated oven at 200°C for approximately 40 minutes, or until a toothpick inserted in the center comes out clean.
Dica: The temperature may vary depending on the oven.
While the cake bakes, prepare the glaze: in a saucepan, mix one cup of milk, a small amount of margarine, and two heaping tablespoons of cocoa powder/chocolate mix. Heat until it starts to boil.
Dica: Do not add sugar to the glaze so the cake doesn't become excessively sweet.
After removing the cake from the oven, use a fork or similar object to poke holes all over the surface of the batter.
Dica: The holes help the glaze penetrate deeply into the cake.
Pour the hot glaze over the cake, ensuring it seeps through the holes.
Prepare the topping: melt half a bar of semi-sweet chocolate with half a small carton of heavy cream in 15 to 20-second intervals in the microwave, stirring during each interval, until a smooth cream is achieved.
Dica: If preferred, the melting can be done using a double boiler.
Spread the melted chocolate topping over the cake, using more or less quantity based on preference.
If desired, finish with sprinkles over the topping.
Dica: The cake can be eaten hot, but it tastes even better after the glaze has had time to soak in.
