Flan recipe with a special touch of instant coffee, baked in a water bath and topped with homemade caramel sauce.

Ingredients
- 1,5cup de Sugar
- 1/2cup de Water
- 3units de Eggs
- 1can de Sweetened condensed milk
- 1can (measure) de Milk
- 2tablespoons de Cocoa powder
- 2tablespoons de Instant coffee
Instructions
Prepare the caramel sauce by mixing the sugar and water in a saucepan. Stir gently at first and cook over medium-low heat until it reaches an amber color, watching carefully to prevent burning and bitterness.
Dica: The bubbles in the caramel will slow down as it reaches the correct stage.
Pour the hot caramel into the flan mold (using an 18 cm diameter pan) and spread it to coat the bottom and sides, handling the mold carefully as it is hot.
Dica: Use a cloth to protect your hands when handling the hot pan.
In a blender, combine the eggs, sweetened condensed milk, milk, cocoa powder, and instant coffee.
Blend all the batter ingredients in the blender until they are completely incorporated.
Pour the liquid mixture over the caramel in the mold and cover it tightly with aluminum foil.
Cook the flan in a water bath (bain-marie) by placing about two inches of hot water in a larger pot. Cover the pot and cook for 30 to 40 minutes, depending on the heat intensity.
Dica: Check for doneness by inserting a skewer; it is ready when it comes out firm and no raw batter clings to it.
Remove the flan from the pot and let it cool completely before unmolding.
Dica: The sauce helps release the flan. If it sticks, gently run a thin knife along the edges before inverting.
Unmold the flan and serve.
