Special holiday rice recipe featuring a combination of almonds, crispy bacon, and sweet dried apricots.

Ingredients
- 3tablespoons de Olive oil
- 1/4unit de Onion
- 1large clove de Garlic
- 2cups de Rice
- 3,5cups de Water
- 1level dessert spoon de Salt
- 100g de Almonds (raw)
- 100g de Bacon
- 100g de Dried apricot
- 1tablespoon de Butter or margarine
Instructions
In a pot, heat the olive oil and sauté the chopped onion until softened.
Dica: The onion should be minced very finely.
Add the garlic, let it brown slightly, and then add the rice, sautéing for a little longer.
Dica: Sautéing the rice well helps keep the grains separate.
Add three cups of water initially and one level dessert spoon of salt. Cook with the pot partially covered over medium-low heat.
Dica: Do not add all the water for the recipe at once; add it as it is absorbed.
While the rice cooks, thinly slice the raw almonds using a knife.
Dica: Slicing the raw almond while keeping the skin on adds color to the rice. For this recipe, 100g (or one 220ml cup) sliced was used.
Chop the dried apricots into small, square pieces.
Dica: The bacon and dried apricots also totaled about 100g each.
When the rice is almost dry, add another half cup of water and cover the pot completely, letting it cook for another 5 minutes.
Dica: After adding the water, cover the pot fully.
In a skillet, melt the butter and toast the almonds over low heat, stirring constantly until lightly golden brown.
Dica: It is crucial not to stop stirring to prevent the almonds from burning and turning bitter.
Remove the toasted almonds from the skillet and set aside in a separate container.
In the same skillet, lightly fry the chopped bacon until it is very golden and crispy, draining any excess fat before setting aside.
Dica: Do not add extra oil, as the bacon will render its own fat.
Turn off the heat for the rice and let it sit covered for a few minutes to finish cooking and become fluffier.
Dica: Leaving the rice covered after cooking helps it reach the ideal texture.
Gently fold in the toasted almonds, fried bacon, and chopped dried apricots into the cooked rice. Separate a small portion of the three ingredients for the final garnish.
Dica: Mix carefully to avoid breaking the rice grains.
Transfer the seasoned rice to a serving dish and garnish the surface with the reserved ingredients.
Dica: The final decoration completes the presentation for the Christmas dinner.
