Ingredients
- 600g de desalted codfish, flaked
- 2tablespoons de olive oil
- 1/2unit de chopped onion
- 1clove de mashed garlic clove

- 1generous tablespoon de cream cheese
- 1cup de olives
- 1/2cup de fresh herbs (cilantro/parsley mix)
- 2cups de milk
- 1/4cup de vegetable oil
- 3units de eggs
- 2,5cups de all-purpose flour
- 1teaspoon de salt
- 1tablespoon de baking powder

Instructions
Prepare the codfish: Sauté half the chopped onion and one mashed garlic clove in olive oil. Add the 600g of desalted codfish flakes and cook until it begins to break apart.
Dica: Do not shred the codfish beforehand, as it will break down during cooking.
Add the two chopped tomatoes and black pepper to the sauté. Cover the pan and cook for approximately 5 minutes so the tomato softens.
Dica: If not using fresh tomatoes, substitute with 150g to 200g of tomato sauce.
Turn off the heat and mix in one generous tablespoon of cream cheese to add creaminess. Taste for salt; adjust only if necessary (the desalted codfish might already be sufficient).
Dica: Salt should only be adjusted after tasting, since the fish has already been desalted.
Mix the olives and fresh herbs into the filling with the heat off. Set the filling aside and let it cool completely.
Dica: The filling must be cold before assembling the pie.
Prepare the batter in the blender: blend the milk, oil, eggs, 2 cups of all-purpose flour, 1 teaspoon of salt, and baking powder until you have a smooth mixture.
Dica: After blending, add an additional half cup of all-purpose flour to make the batter thicker, bringing the total to 2 and a half cups of flour.
Grease and lightly flour a baking dish (approximately 10x14 inches, or 25x35 cm). Pour one half of the batter into the dish, covering the bottom.
Dica: The suggested pan size is 2 inches (5 cm) deep.
Spread the entire cold codfish filling evenly over the first layer of batter.
Cover the filling with the remaining blender batter, ensuring the entire filling is sealed in. If desired, sprinkle grated Parmesan cheese on top.
Dica: Parmesan cheese will add extra crunch and flavor.
Bake the pie in a preheated oven at 350°F (180°C) for about 35 to 40 minutes, or until golden brown.
Dica: It is crucial to let the pie cool slightly after removing it from the oven so it sets before slicing, preventing it from falling apart.
