A recipe for a very light and vibrantly colored corn cake, made simply by blending all the ingredients in a blender.
Recipe Video
Ingredients
- Corn (kernels)
- Eggs
- Oil
- Sugar
- Milk
- Cornmeal (fine ground)
- Baking Powder
Instructions
Add the corn kernels, eggs, oil, sugar, and milk to the blender.
Dica: The ingredient amounts are in the video description (not provided in the transcription).
Blend the mixture for about two minutes. It is important not to strain the mixture after blending.
Dica: Do not strain the mixture to keep the corn solids.
Add the cornmeal to the mixture and blend for one more minute. Note that the final batter will be thin/liquid.
Dica: Do not worry about the thin consistency; it is expected for this recipe (it does not use wheat flour).
Transfer the contents of the blender to a separate bowl and mix the baking powder in separately.
Dica: Optionally, you can add the baking powder directly into the blender if you prefer.
Carefully grease a baking pan and pour all the thin batter into the prepared pan.
Bake the cake in a preheated oven at 350°F (180°C) for 35 minutes.
Dica: The texture and tenderness of the cake are surprising, even if it looks like it might not turn out well.
