Classic 'Sonho' recipe with a marvelous pastry cream, resulting in an incredibly soft and dry dough, worthy of a professional bakery.

Ingredients
- Dry ingredients (for the dough)
- Yeast
- Butter
- Egg
- a little de Water
- All-purpose flour
- Sweetened condensed milk
- Cornstarch (Maizena)
- Egg yolks
- a little more de Sugar
- Milk
- Oil for frying
- Ready-made pastry cream filling
Instructions
Mix all the dry ingredients for the dough in a bowl.
Dissolve the yeast separately and add it to the mixture in the bowl.
Add the butter, egg, and a little water to the dough.
Knead the dough vigorously until the flour's gluten is activated and the dough becomes very moist and soft.
Let the dough rise, covered, for 30 minutes.
While the dough rests, prepare the pastry cream: dissolve the sweetened condensed milk with the cornstarch.
Add the egg yolks (strained, if desired) and a little more sugar and milk to the cream mixture.
Dica: Straining the yolks helps prevent lumps.
Cook the cream mixture over heat until it thickens and reaches the desired pastry cream consistency.
Chill the pastry cream completely.
Shape the risen dough into portions of 50g each.
Allow the shaped portions to proof for another 15 minutes.
Deep-fry the 'sonhos' in oil that is not too hot, until they are golden brown and soft.
Dica: Use oil that is not too hot to ensure the dough turns out dry.
Fill the fried 'sonhos' with the prepared pastry cream (ready-made pastry cream).
Garnish and serve the dream doughnuts.
Dica: Arrange the doughnuts nicely on a serving plate for presentation.
