Instructions
Season the chicken by rubbing it with lemon, salt, and pepper. Let it marinate for approximately one hour.
Combine the potatoes, apples, and carrots in a bowl, adding orange juice, bay leaves, olive oil, salt, and pepper.
Sauté the seasoned vegetables and fruit in a skillet until they are lightly browned.
Dica: Browning the ingredients helps enhance the flavor.
Transfer the browned ingredients to a roasting pan and mix well with the chopped onion.
Place the marinated chickens on top of the vegetables in the roasting pan and insert a sprig of rosemary into the cavity of each one.
Rub butter all over the outside of the chickens.
Roast the chicken in the oven until it reaches the desired golden color.
After cooking, cut the chicken into large pieces and serve, alternating with the roasted vegetables and fruit.
