Instructions
Heat a good amount of olive oil over medium-low heat and add the sausage. Cook slowly so the fat melts well, avoiding large chunks of fat.
Dica: The goal is to melt the fat and brown the sausage without drying it out too much, since it will go into the casserole filling.
Add the sliced onion to the skillet with the sausage and increase the heat. Stir until the onion is softened, without needing to fry or brown it.
Dica: Take advantage of the flavor left in the skillet from the sausage.
Turn off the heat and add the bread to the mixture in the skillet. Stir quickly just enough for the bread to absorb the flavors and fat, without toasting or browning.
Dica: Older bread absorbs the ingredients better. Let the bread sit for a moment to fully absorb the flavors.
In a separate bowl, prepare the liquid mixture by whisking the milk, eggs, half of the reserved Parmesan cheese, and a little pepper. Beat well until smooth, ensuring the eggs are fully incorporated.
Dica: Be cautious with the salt, as the sausage and cheese are already salty. It is better to leave it slightly lighter on salt initially.
Pour the liquid mixture over the bread and sausage in the skillet, distributing evenly so the bread re-moistens and swells up.
Dica: Use a ladle to ensure even distribution of the liquid.
Transfer the mixture to a suitable baking dish. Sprinkle the remaining Parmesan cheese over the top to form a browned crust.
Dica: Browning the cheese on top gives a tastier finish.
Bake in a preheated oven at 350°F (medium) for 30 to 40 minutes, or until the casserole has risen and the surface is nicely browned.
