Instructions
In a blender, combine the milk, oil, eggs, and sugar and blend until smooth (about 2 minutes).
Dica: The espresso or brewed coffee should be added at this stage to enhance the chocolate flavor.
In a separate bowl, sift and mix the all-purpose flour, cocoa powder, baking powder, and baking soda.
Dica: Baking soda helps darken the color and intensify the flavor of the cake.
Fold the liquid mixture from the blender into the dry ingredients using a spatula or whisk until a uniform batter is achieved.
Dica: Mix just until the batter is smooth to avoid overdeveloping the gluten.
Divide the batter evenly into three 6-inch diameter pans, previously greased with butter and dusted with cocoa powder. Place parchment paper at the bottom of each pan.
Dica: Baking in smaller pans facilitates assembly into a naked cake style. If using one larger pan, adjust the baking time.
Place the pans in a preheated oven at 350ºF (180ºC) and bake until a toothpick inserted into the center comes out clean.
Dica: The ideal doneness is when the top of the batter is golden brown.
Once completely cooled, carefully remove the cake layers from the pans.
Prepare for assembly in a naked cake style: place a thin layer of whipped topping on the serving plate.
Dica: Using 500 ml of whipped topping is recommended for the complete assembly.
Place the first cake layer onto the whipped topping and generously brush it with cherry liqueur or the syrup from the canned cherries.
Dica: Do not skimp on the syrup to thoroughly moisten the cake layers.
Cover the moistened layer with a portion of whipped topping, distribute some of the cherries in syrup, and sprinkle with grated dark chocolate.
Dica: Use about 1.5 cups of cherry syrup total for the assembly, and 300g of grated chocolate.
Repeat the sequence: more whipped topping, cake layer, moisten with syrup, more whipped topping, cherries, and grated chocolate until the final cake layer is placed on top.
Finish by brushing the remaining syrup over the top of the cake and spreading whipped topping over the entire surface and sides.
Decorate the top with the remaining grated dark chocolate, fresh cherries, and mint leaves, if desired.
Dica: Decorating with fresh cherries and mint gives a sophisticated final touch.
