- 1level tablespoon de baking powder
- 1/2level tablespoon de baking soda
- 2,5cups de all-purpose flour
- 1,5cup de water
- 2cups de milk
- 1/2cup de Nesquik or other chocolate drink mix
- 1cup de sugar (for frosting)
- 1/4cup de butter (for frosting)
- 1/4cup de milk (for frosting)
- 1cup de chocolate drink mix (for frosting)
Instructions
In a stand mixer or bowl, beat the three eggs for one minute.
Add one and a half cups of sugar (granulated or demerara is fine) and beat for another minute.
Dica: Acceptable sugar substitutions are granulated or demerara.
Add one cup of oil (or room temperature butter/margarine) and beat for another minute.
Dica: If using butter or margarine, make sure they are at room temperature.
Incorporate one and a half cups of chocolate drink mix (or half this amount if using 50% cocoa powder).
Dica: If using 50% cocoa powder, use only half the amount of chocolate drink mix.
Add one level tablespoon of baking powder, half a level tablespoon of baking soda, two and a half cups of all-purpose flour, and one and a half cups of room temperature water.
Dica: The measurements for baking powder and soda should be level.
Mix lightly and beat the batter for one more minute, until you obtain a smooth and nice-looking mixture.
Dica: The batter should look very good.
Transfer the batter to a baking pan (a 10x2.5-inch square pan) greased with butter and dusted with flour.
Dica: Prepare the baking pan by greasing it with butter and dusting with flour.
Bake in a preheated electric oven at 338°F (set to top and bottom heating) or in a conventional oven at 350°F, until a skewer inserted comes out clean.
Dica: Oven time varies until the toothpick comes out completely clean.
After the cake cools, poke holes in the surface with a fork to absorb the soaking liquid.
Dica: Poking holes in the cake will make it tastier as it absorbs the liquid.
For the simple soaking liquid (which is not cooked), mix two cups of milk with half a cup of Nesquik or your preferred chocolate drink mix.
Dica: This soaking liquid does not need to be cooked, and although all recipe ingredients are listed in the description, only a few are mentioned here.
Pour the soaking liquid over the poked cake and gently press down with your hands so it soaks in well.
Dica: Gently press the cake so the liquid is completely absorbed.
Prepare the crunchy frosting by heating a mixture of one cup of sugar, 1/4 cup of butter (about 2 oz), 1/4 cup of milk (about 2 fluid oz), and one cup of chocolate drink mix over medium heat.
Dica: Mix the frosting ingredients before turning on the heat.
Stir over medium heat until the mixture thickens and reaches the consistency of a soft fudge (brigadeiro mole).
Dica: The desired consistency is similar to a soft fudge, which will result in a dry and crunchy topping when cooled.
Immediately spread the hot frosting over the soaked cake.
Dica: Pour the frosting while it is still hot.
Leave the cake at room temperature until the frosting dries completely and becomes set.
Dica: Wait for the topping to dry completely before serving.
Cut the cake into desired portions and serve.
Dica: This is considered the best chocolate cake you will ever make.
