Ingredients

Instructions
Fry about 200g of bacon until nicely browned and crispy in the pan, using only the rendered fat (without adding oil or butter).
Dica: The bacon should fry for about 10 to 15 minutes to reach the desired crispiness.
Add one finely minced onion to the fried bacon and sauté until it is well caramelized and sweet.
Dica: If preferred, the onion can be chopped into larger pieces or slices, according to your taste.
Boil half a package of penne pasta (or your preferred shape) for the time indicated on the package, adding one teaspoon of salt to the cooking water.
Dica: Make sure the pasta is cooked according to the package directions.
In a blender, place four large potatoes, one cup of milk, half a cup of heavy cream, and 200g of cream cheese.
Dica: Add milk gradually if the blender has trouble processing to ensure a smooth cream. Adjust the milk quantity based on your desired consistency for the mash.
Blend the cream ingredients in the blender until you obtain a smooth, homogenous mash. Taste and adjust the salt, adding the remaining quantity needed.
Dica: Turn the blender on and off in short bursts to help appliances that are less powerful.
Mix the sautéed bacon and onion into the drained, cooked pasta.
Dica: Check the seasoning of the cooked pasta before adding more salt.
Incorporate the blended potato cream into the pasta and bacon mixture, spreading well to coat all the pasta.
Dica: The recipe needs plenty of mash to be truly creamy.
Transfer the creamy mixture to an oven-safe baking dish.
Generously cover the surface with 200g of shredded mozzarella cheese.
Dica: You can bake it to melt/brown the cheese, or just let the heat from the pasta melt the cheese.
Sprinkle chopped chives over the cheese before serving.
