Instructions
In a blender, add the whole eggs, passion fruit pulp, oil, and sugar.
Dica: Blend thoroughly to break down the passion fruit seeds. If you prefer not to have seeds, strain the pulp or use concentrated juice.
Sift the all-purpose flour and gradually add it to the wet mixture, gently folding it in with a whisk.
Dica: Using a whisk instead of blending in the blender helps keep the cake lighter and fluffier.
Fold in the baking powder, mixing gently until just combined.
Dica: The batter will be very fragrant at this stage.
Pour the batter into a baking dish that has been lightly greased with butter (no need to flour).
Dica: The suggested baking dish is approximately 9x9 inches or 9.5x9.5 inches.
Bake the batter in a preheated oven at 350°F (180°C) for about 30 minutes, or until the cake is golden brown and fragrant.
Dica: Use the smell test to tell if the cake is done.
While the cake cools slightly, prepare the fake brigadeiro icing by mixing the whole milk, granulated sugar, 50% cocoa powder, and unsalted butter/margarine in a saucepan.
Dica: Stir before placing over heat.
Cook the mixture over low heat, stirring constantly until the cream thickens and reduces slightly, pulling away lightly from the bottom of the pan (creamy topping consistency).
Dica: Cooking for about 13 minutes should be enough for a creamy consistency. If you want a rollable consistency, cook for 18-19 minutes.
While the cake is still warm, slice it, making it easier to apply the topping.
Dica: The knife will glide easily due to the cake's softness.
Pour the hot fake brigadeiro icing evenly over the cake slices.
Dica: The cake will absorb the icing, which will gain more creaminess as it cools.
Serve the cake with the icing. If desired, allow it to cool completely so the icing firms up slightly.
