Prepare the Sushi Vinegar (Su): Mix sugar, rice vinegar, and salt until the sugar dissolves completely.

In a bowl, combine the seasoned rice with cream cheese, raisins, and chopped scallions. Mix vigorously until a uniform mixture is obtained.
