Instructions
Prepare the liquid for the filling by mixing water, scallions, and peppercorns (or other spices of your preference). This liquid will help make the filling juicier.
Dica: This step aims to remove the strong odor from the pork.
In the bowl with the ground pork, add the Shao Xing wine, oyster sauce, sugar, and sesame oil. Also add the chopped white part of the scallions.
Dica: Use circular motions to mix the filling until all the liquid is absorbed.
To assemble the wontons, take a wrapper sheet and place a portion of the filling in the center using a small spatula.
Dica: The filling should not be excessive, to prevent the dumpling from being too 'doughy' after cooking.
Fold the wrapper in half, joining the edges to seal. There are several closure methods; one involves bringing the two opposite points together like a gift wrap.
Dica: Another technique involves folding in half and joining the remaining two corners. A third, more wrinkled style, involves bringing the corners toward the center with the help of a spatula, forming an envelope.
Place the assembled wontons on a flat surface without stacking them, to prevent sticking. If freezing, place them in the freezer until solid, then store them in a plastic bag.
Dica: For future cooking, make sure they are completely separated before storing.
Prepare the soup garnish by frying a thin omelet. Beat the egg with a pinch of salt and pour it into a hot skillet with a little oil, spreading it thinly to create a thin layer.
Dica: Lightly press the pan with a paper towel before adding the egg to remove excess oil.
As soon as the omelet sets slightly, transfer it to a cutting board and slice it into very thin strips.
In a separate bowl for assembling the soup, combine salt, soy sauce, sugar, fish seasoning, black pepper, and sesame oil. Add a bit of the Chinese pickled mustard greens and shred a little of the thin purple seaweed.
Dica: Mix these seasonings in the bowl where the broth will be served.
Boil water in a pot and cook the wontons for about one minute, or until they float to the surface.
Carefully transfer the cooked wontons to the seasoning bowl. Then, add the broth obtained from cooking the wontons (or use chicken broth).
Finish the dish by adding the sliced omelet strips and chopped scallions on top before serving.
