Recipe for an extremely fluffy carrot cake made without wheat flour, finished with a creamy brigadeiro-style chocolate frosting.

Ingredients
- 3 de eggs
- 3/4cup de oil
- 1,5cup de sugarSubstitui por: açúcar refinado
- 1,5cup de chopped carrots
- 1cup de rice flour
- 1/2cup de cornstarch
- 1,5level tablespoon de baking powder
- butter
- 2can/box de sweetened condensed milk
- 80g de semisweet chocolate
- 1can/box de heavy cream
- 1/2cup de unsweetened cocoa powder (50% cacao)
- sprinkles opcional
Instructions
In a blender, combine the eggs, oil, sugar, and chopped carrots.
Pour the liquid mixture from the blender into a bowl.
Add the rice flour, cornstarch, and baking powder, mixing gently until fully incorporated.
Prepare an 8x3 inch baking pan by greasing it with butter and dusting it with cornstarch.
Dica: Use cornstarch for dusting instead of wheat flour.
Pour the cake batter into the prepared pan and place it in the preheated oven.
Dica: For an electric oven, set to 340°F (top and bottom heat). For a conventional oven, set to 350°F.
Bake the cake for approximately 50 minutes, or until completely cooked through.
Prepare the frosting by heating the sweetened condensed milk, semisweet chocolate, butter, heavy cream, and sifted cocoa powder in a saucepan, stirring constantly.
Dica: The cocoa powder used is 50% cacao.
Separate a portion of the finished frosting to use as a sauce to pour over the cake.
Dica: Place the separated sauce in a small pitcher or gravy boat for easier pouring over the cake.
Cook the remaining frosting mixture over low heat until it reaches the consistency of firm, rollable brigadeiro (truffle mixture).
After the rollable truffle mixture has cooled, mold it into small balls, roll them in sprinkles, and use them to decorate the cake, pouring the reserved sauce over the top.
