- 180g de All-purpose flour
- 1pinch de Salt
- 1teaspoon de Baking powder
- 1can/box de Sweetened condensed milk
- 1/2cup de Powdered milk
- 1can/box de Heavy cream
- 300ml de Milk (liquid)
- 1can/box de Sweetened condensed milk
- 1pinch de Margarine
- 1tablespoon de Heavy cream
- 1teaspoon de Powdered milk
- 200g de Whipped topping (like Cool Whip)
- 2tablespoon de Sweetened condensed milk
- 1teaspoon de Powdered milk
- units de Strawberries opcional
Instructions
Beat the egg whites until stiff peaks form, then add the yolks and beat a little more.
Add the sugar and the pinch of salt to the egg mixture and continue beating until well combined.
Sift the all-purpose flour and gradually add it to the batter, mixing gently.
Dica: The batter should have a ribbon-like consistency.
Add the teaspoon of baking powder to the batter and mix lightly.
Dica: The original recipe doesn't include leavening, but it has been added for better results.
Transfer the batter to an 8-inch round pan with parchment paper only on the bottom (the sides do not need to be greased for the cake to rise correctly).
Dica: The pan used has an 8-inch base and 4-inch height.
Bake in a preheated oven at 350°F or 400°F, for approximately 40 to 45 minutes.
While the cake bakes, prepare the soaking liquid: mix the sweetened condensed milk, powdered milk (half a cup), heavy cream, and the 300 ml of liquid milk.
Dica: Keep the soaking liquid refrigerated to keep it cold.
Remove the cake from the oven after the cooking time, check for doneness, and invert it onto the serving container or final plate.
Dica: Use a small knife to loosen the edges, if necessary.
Poke the entire surface of the cake with a fork or skewer.
Dica: Sponge cake absorbs liquid rapidly.
Pour the entire 4-milk soaking liquid over the cake, ensuring it becomes very saturated.
Dica: Don't hesitate to use all the liquid.
Place the soaked cake in the refrigerator to fully absorb the liquid while you prepare the extra filling/frosting.
Prepare a soft fudge frosting (brigadeiro mole): Cook the sweetened condensed milk, margarine, heavy cream, and one spoonful of powdered milk in a saucepan until it reaches a soft fudge consistency.
Dica: If you want to speed up cooling the fudge, place the saucepan in a bowl of ice water.
Cover the chilled and saturated cake with the soft fudge frosting, spreading it over the entire top and sides.
Prepare the chantininho or topping by whipping 200g of whipped topping with 2 tablespoons of sweetened condensed milk and 1 teaspoon of powdered milk until firm.
Dica: Whipping slightly less will result in a creamier texture.
Decorate the cake with the chantininho prepared, using your preferred decoration style (like small rosettes), and finish with fresh strawberries.
