A simple and quick creamy pasta salad (macaroni salad), perfect for any occasion, like Christmas.

Ingredients
- 1cup de onion
- 2tablespoons de garlic
- 1,5level teaspoons de salt
- 1/2level teaspoons de black pepper
- 1/2tablespoons de oregano
- 1/4cup de olive oil
- 2liters de water
- 250g de rotini pasta
- 1level tablespoon de salt
- 1tablespoon de olive oil
- 1small carton de heavy cream
- 1/2cup de mayonnaise
- 1can de canned corn
- 1/2cup de peas
- 1/4cup de chopped black olives
- 1cup de grated carrot
- 150g de sliced and chopped ham
- 2level tablespoons de chopped fresh parsley
- 2level tablespoons de chopped fresh chives
Instructions
In a baking dish, combine coarsely chopped onion, coarsely chopped garlic, (level) salt, (level) black pepper, oregano, and olive oil.
Place the baking dish with the seasonings in a preheated oven at 350°F (180ºC) for about 20 minutes, until lightly browned.
Dica: The seasoning should be nicely browned, but not completely dark.
While the seasoning roasts, boil 2 liters of water in a pot and add 250g of rotini pasta and 1 level tablespoon of salt.
Dica: You can use your preferred type of pasta.
Cook the pasta until it is 'al dente,' stirring occasionally, and drain.
Add 1 tablespoon of olive oil to the cooked and drained pasta, mixing so the pieces don't stick together.
Transfer the roasted seasonings (once cooled) to a blender, add a small carton of heavy cream and half a cup of mayonnaise, and blend for about two minutes.
Dica: Scraping down the sides with a spatula and blending a little longer can ensure a smoother mixture.
In a large bowl, combine the cooked pasta with the blended sauce, canned corn, peas, chopped black olives, grated carrot, chopped ham, chopped fresh parsley, and chopped fresh chives.
Dica: If desired, sprinkle a little more fresh parsley on top when finishing.
Mix all the ingredients well until the sauce is evenly incorporated with the pasta and mix-ins.
