A classic codfish fritter recipe, full of history and flavor, straight from the North Zone of São Paulo.

Ingredients
- 1kg de Salt Cod (Bacalhau)
- 1,4kg de Potatoes
- 1unit de Onion
- 3cloves de Garlic
- 290g de Fine Cornmeal
- Parsley opcional
- Scallions (Green Onions) opcional
- Oregano opcional
- Pepper opcional
- Salt opcional
- Oil
Instructions
Soak the salt cod in water for 36 hours.
Boil the salt cod in water for 20 to 30 minutes.
Shred the salt cod and set aside.
Mash the cooked potatoes.
Sauté the onion, garlic, scallions, oregano, and pepper in oil.
Add the shredded salt cod to the sauté and mix well.
Mix the mashed potatoes with the salt cod and the sautéed mixture.
Add the fine cornmeal and mix until you achieve a uniform dough.
Shape the dough into small balls (fritters).
Deep-fry the fritters in hot oil until golden brown.
