Recipe for rice cooked with bacon, smoked sausage (calabresa), broccoli, and peas, finished with fresh herbs and melted mozzarella.

Ingredients
- 3tablespoons de Diced bacon
- 1/2unit de Diced smoked sausage (like kielbasa or andouille)
- 1/2unit de Diced onion
- 5florets de Diced broccoli (small florets)
- 1/3cup de Frozen peas
- 1cup (240ml) de Long-grain white rice
- Black pepper
- Salt opcional
- Water
- a little de Chopped fresh herbs (cilantro/parsley mix)
- a little de Cubed mozzarella cheese
Instructions
Brown the bacon and smoked sausage in a skillet, using the rendered fat.
Add the diced onion to the sauté and let it brown well to caramelize.
Dica: Well-browned onion lends a deeper, more caramelized flavor to the dish.
Add the broccoli (preferably raw) and the frozen peas to the sauté mixture.
Dica: Using raw broccoli ensures it cooks perfectly alongside the rice.
Stir the rice (using a 240ml cup measure) into the sauté.
Season with black pepper, but avoid adding salt at this stage, as the bacon and sausage already contain salt.
Dica: Taste the rice at the end to check if salt adjustment is necessary.
Add enough water to cook the rice, slightly more than usual, and cook uncovered to prevent the broccoli from turning grayish.
Dica: If the water dries out, add more little by little.
After cooking, mix in the chopped fresh herbs and the cubes of mozzarella cheese into the rice.
Cover the skillet briefly to allow the cheese to melt before serving.
