Recipe for fried rice fritters, a delicious snack made with leftover rice, eggs, cheese, and fresh herbs.

Ingredients
- 1,5cup de Cooked rice (leftovers)
- 2unit de Eggs
- 180ml de Milk
- Grated Parmesan cheese
- 4serving spoon de Frozen herbs (parsley and chives)Substitui por: salsinha fresca, cebolinha fresca
- 1,5cup de All-purpose flour
- 0 de Salt opcional
Instructions
In a bowl, add the two eggs and whisk lightly.
Add the herbs (parsley and chives) to your liking to make the mixture nice and green.
Dica: Use two large spoonfuls of each herb.
Add the cooked rice. The amount used was approximately six large serving spoonfuls (about 1.5 cups of cooked rice).
Dica: The rice should already be seasoned, eliminating the need for extra salt.
Incorporate the milk, about 180 to 200 ml, just enough to moisten all the ingredients.
Dica: Mix quickly just to combine. The batter should not be completely pureed; the rice grains should remain visible.
Add the all-purpose flour gradually, mixing until you achieve a thick and firm batter, similar in consistency to doughnut batter (that still allows you to drop spoonfuls into the oil).
Dica: The final amount was approximately one and a half cups of flour (considering smaller cups, around 200ml). Add gradually until it is no longer too loose.
Add the grated Parmesan cheese to the batter and mix until fully incorporated.
Heat the oil in a skillet until it is very hot.
Dica: Chemical leavening (baking powder) is not necessary if the batter is the correct consistency.
Using two spoons, drop small portions of the batter into the hot oil to fry the fritters.
Dica: Turn the fritters and remove them as soon as they are golden brown.
Remove the fried fritters from the oil and place them on paper towels to drain excess grease.
