Instructions
Dissolve the cornstarch in part of the milk.
In a saucepan, combine the sweetened condensed milk, butter, the remaining milk, and the cornstarch mixture.
Add the heavy cream to the saucepan.
Cook over medium heat, stirring constantly, until the mixture reaches the consistency of a thick pudding.
Dica: Keep the heat on medium.
Transfer the cooked cream to a bowl and immediately cover it with plastic wrap, ensuring the film touches the surface of the cream to prevent a skin from forming.
Dica: Cover with plastic wrap touching the cream surface.
Moisten the cookies by quickly dipping them three times into the strong espresso.
Dica: Swirl the cookies in the coffee just three times, very quickly, so they don't get soggy.
Begin assembling the pavê, alternating layers of coffee-soaked cookies and layers of the prepared cream.
Dica: Start with cookies and finish with a layer of cream.
Finish the assembly by sprinkling unsweetened cocoa powder over the top layer of cream.
Dica: The cocoa powder adds visual appeal. If you prefer, you can use grated semi-sweet chocolate.
Refrigerate the pavê to firm up.
Dica: The ideal time is 6 hours, but leaving it overnight guarantees better firmness.
