Recipe for pork rinds with a special marinade

Ingredients
- 1unit de Onion
- 5cloves de Garlic
- 4tablespoons de Parsley
- 4tablespoons de Scallions (Green Onions)
- 1tablespoon de Oregano
- 1unit de Lime juice
- 1unit de Orange juice
- 100ml de Olive Oil
- 1teaspoon de Paprika
- 1tablespoon de Salt
- 100ml de Vinegar
- 1tablespoon de Baking Soda
- 1kilogram de Pork Belly (for cracklings)
- Oil
Instructions

baterBlend the onion, garlic, parsley, scallions, oregano, lime juice, orange juice, olive oil, paprika, and salt in a blender.

marinarPlace the marinade in a bag with the pork belly cut into strips and let it sit for at least 12 hours.

misturarPrepare the magic mixture with the vinegar, lime juice, and baking soda.

pincelarRub the magic mixture over the skin of the pork belly to crisp it up (to achieve 'pururuca').

fritarFry the pork belly in oil over medium heat, set aside, and finish by frying in very hot oil.
