A recipe for caramelized coconut cake, made simply and which can be prepared by hand or with a stand mixer.

Ingredients
- 1cup de Sugar
- 1tablespoon de Margarine or Butter
- 2 de Eggs
- 2cups de All-Purpose Flour
- Finely Ground Coconut (for batter)
- 1/2cup de Milk
- 1tablespoon de Baking Powder
- pinch de Salt
- 1/2package de Shredded Coconut
Instructions
Caramelize the sugar in the bottom of the cake pan. Sprinkle a little of the shredded coconut over the caramel.
In a blender or stand mixer, mix the margarine (or butter), eggs, remaining sugar, salt, a little of the finely ground coconut, and beat.
Dica: If preferred, this step can be done by hand.
Add the two cups of all-purpose flour to the mixture and gradually add the milk until a smooth batter is obtained, reserving a little of the milk.
Dica: The final batter should be slightly firmer, like a coconut candy mixture, and should not use the entire cup of milk.
Gently fold in the tablespoon of baking powder and mix just enough to combine.
Carefully pour the batter over the existing layer of coconut in the caramelized pan.
Dica: The batter will look a bit lumpy due to the coconut.
Bake in a preheated oven at 200°C for approximately 40 minutes.
Dica: Wait for the cake to cool slightly before removing it from the pan so it doesn't fall apart.
