Ingredients
- 600ml de Whole milk
- 1cup de Cornstarch (Maizena)
- 1box de Sweetened condensed milk
- 1box de Heavy cream
- 1small jar de Coconut milk
- 60grams de Shredded coconut
- 1a little de Vegetable oil opcional
- 1cup de Sugar
- a few de Water
- 60grams de Pitted dried plums (prunes)
Instructions
In a saucepan, mix the milk (600ml) with the cornstarch until completely dissolved.
Dica: If you prefer, remove a portion of the milk before heating to dissolve the cornstarch. If not using cornstarch, cook the milk until almost boiling.
Add the sweetened condensed milk, heavy cream, and coconut milk to the mixture.
Dica: Wait until the mixture starts to thicken before adding the shredded coconut.
Stir the mixture continuously over medium heat until it begins to thicken and becomes smooth and homogenous.
Dica: It is crucial to stir constantly to prevent lumps from forming.
Incorporate the shredded coconut into the pudding base.
Dica: The mixture might seem like it will clump due to the coconut, but it will become smooth.
Let the pudding cook for another 4 to 5 minutes after adding the coconut, then turn off the heat.
Grease the mold with a little vegetable oil or rinse with water and pour it out so the pudding does not stick.
Dica: Using oil does not impart flavor to the sweet.
Pour the pudding into the prepared mold and let it cool completely.
Dica: Cover with plastic wrap only after the sweet starts chilling.
Refrigerate the pudding for approximately 4 hours to set.
Prepare the sauce by melting the sugar in a saucepan over low heat.
Dica: Reduce the heat after the sugar melts.
Add water gradually to the caramel, being careful, as it may temporarily harden.
Dica: Be cautious when adding water to the hot caramel.
Add the pitted dried plums to the sauce and cook until the sauce is ready.
Dica: Use only pitted dried plums, as canned ones with syrup can make the topping hard.
Let the sauce cool before unmolding the pudding and topping it for serving.
