Instructions
Beat the egg whites until stiff peaks form, then gradually add the sugar.
Turn the mixer to low speed and gradually incorporate the baking powder.
Dica: Watch for the batter to become homogeneous.
Pour the batter into a pan previously lined with parchment paper and lightly greased with margarine. The suggested pan size is approximately 16x12 inches, but you can also use a standard rectangular baking dish.
Dica: Spread the batter evenly in the pan.
Bake in an oven preheated to approximately 400°F (200°C) for about 15 to 20 minutes.
Dica: The cake should be fully baked after 20 minutes.
Softened the dulce de leche in the microwave before using it as a filling.
Dica: Softened dulce de leche makes application and rolling easier.
Spread the dulce de leche over the warm cake as soon as it comes out of the oven, sprinkling crushed peanuts on top, if desired.
Dica: The peanuts add extra flavor.
Carefully roll up the cake. Trim any edges that may be too dark or imperfect.
Dica: It is recommended to let it cool slightly before rolling to prevent breakage.
Garnish the surface of the roll cake with a dusting of confectioners' sugar, if preferred.
Dica: The decoration is optional.
To slice the warm roll cake, use dental floss (unwaxed is best) to achieve cleaner and more uniform cuts.
Dica: Dental floss is especially useful when the roll is still warm, as it prevents the filling from squishing the cake.
