Ingredients
- 250g de Rice
- 200g de Black-eyed Peas
- 300g de Dried, Salted Beef (Carne de Sol)
- 150g de Bacon
- 1 de Red Onion
- 150g de Grilling Cheese (Queijo Coalho)
- 4 de Tomato
- 1 de Green Bell Pepper
- 2cloves de Garlic
- 2cups de Beef Broth
- 2tablespoons de Clarified Butter (Manteiga de Garrafa)
- 1/2 de Bico de Moça Chili (or similar medium-hot pepper)
- 1/2teaspoon de Ground Cumin
- Salt
- Bay Leaf
- Fresh Cilantro
Instructions
Fry the bacon in a pot until lightly browned.
Add the chopped onion and garlic and sauté until lightly golden.
Dica: Be careful not to burn the garlic.
Add the rice and sauté for about 3 minutes.
Add the chopped tomato and bell pepper and cook for about 3 minutes.
Add the cooked and shredded dried, salted beef and cook for about 3 more minutes.
Add the seasonings and mix well.
Add the beef broth and cook for about 16 minutes.
Add the cooked black-eyed peas and cook until the liquid has completely evaporated and dried.
Sear the Queijo Coalho (grilling cheese) in a hot skillet.
Add the seared cheese and finish with cilantro.
