Ingredients
- 1kg de shrimp
- 2units de onion
- 1/2unit de green bell pepper
- 1unit de tomato
- fish flavoring/broth base (fava) opcional
- 4stalks de scallions (green onion)
- 3cloves de garlic
- to taste de annatto powder (colorau)
- to taste de pepper
- to taste de salt
- 1tablespoon de tomato paste
- 2tablespoons de oil
- 1cup de water
Instructions
Finely chop the two onions, the green bell pepper, and the tomato. Prepare the crushed garlic cloves and the chopped scallions (if using frozen, use them directly).
In a saucepan, combine the oil, crushed garlic, chopped onion, bell pepper, tomato, fish base (if using), scallions, salt, pepper, annatto powder, and tomato paste.
Dica: The preparation involves mixing all the seasonings and aromatic ingredients together.
Add the cup of water to the sautéed seasonings and let it cook briefly so the sauce deepens in flavor before adding the shrimp.
Dica: Cooking the sauce first prevents overcooking the shrimp.
Rinse and thoroughly drain the shrimp (1kg). Add the shrimp to the pan with the pre-cooked sauce.
Dica: If serving immediately, let the shrimp simmer for only about 5 minutes to allow the seasoning to penetrate.
If the meal is not immediate, turn off the heat after adding the shrimp, keeping it ready in the pan to heat up just before serving (about 5 minutes of simmering).
Dica: Heating the shrimp quickly right before serving prevents it from becoming rubbery.
If you desire more sauce (for serving with risotto, for example), adjust the amount of water. If you prefer it drier, do not add more water than what was used in the initial cooking of the sauce.
Dica: The shrimp releases some liquid while cooking.
