Instructions
In a large bowl, use clean hands to combine the ground beef with one egg, the onion soup mix, smoked paprika, salt, pepper, and finely minced garlic.
Dica: Mix the seasonings well into the meat. Add any dried herbs you prefer.
Gradually incorporate the oat flour (or breadcrumbs), adding just enough until the mixture reaches a consistency firm enough to shape into patties resembling cutlets, ensuring you use up the initial flour added.
Dica: The amount of flour may vary; add until the mixture holds together well.
Shape the meat mixture into individual portions, forming them into the desired Milanese cutlet shape.
Dica: The size of the cutlet should suit your cooking method (frying or air fryer).
Prepare the breading station: In one shallow dish, whisk one egg with a little milk, salt, and pepper. In a second dish, place the all-purpose flour, and in a third, place the Panko breadcrumbs (or breadcrumbs).
Dica: Seasoning the egg wash prevents the outer crust of the Milanese from being bland.
Dredge each meat patty first in the all-purpose flour, shaking off the excess. Next, dip it into the whisked egg, and finally, coat thoroughly with the Panko breadcrumbs, pressing firmly to ensure the coating adheres well.
Dica: Pressing the Panko crumbs firmly is crucial for the crust to stay intact after cooking.
Place the breaded patties on a plate. They can be transferred to the freezer (in plastic bags, 1 or 2 per bag) for later use in the air fryer or frying.
Dica: If using an air fryer, brush a little olive oil over the tops before baking.
Heat the oil in a skillet to the proper temperature (temperature not specified), and fry the cutlets individually until evenly golden brown on both sides, ensuring the meat is cooked through.
Dica: When removing the cutlets from the oil, place them on a wire rack or paper towels (though a wire rack is preferred to prevent excess grease absorption).
Serve the ground beef Milanese hot, ideally alongside rice and beans, or use them to make a parmigiana by topping with tomato sauce and cheese to bake until bubbly.
Dica: If making parmigiana, place under the broiler briefly to melt and brown the cheese.
