Instructions
Divide each cod loin in half, carefully removing the backbone to yield more servings.

In a pot, boil water with thyme, bay leaf, and one clove of garlic to infuse flavor.
Simmer the cod pieces in the boiling water for 5 minutes, since they are already thawed.
Dica: This initial simmering is quick because the cod will still go into the oven.
Cook the potatoes in the same seasoned water used for the cod, and once cooked, drain them.
Dica: The potatoes will be fragrant with the flavor of the cod simmering liquor.
Generously grease a baking dish (porcelain or glass) with olive oil to begin layering.
