Instructions
Cook the kabocha squash cubes in a pot with water and salt until they are very tender.
Dica: Cooking the squash in salted water helps season the mash as it cooks.
While the squash cooks, prepare the filling: sauté the onion, garlic, and red bell pepper in a pan with olive oil.
Dica: The dried beef should have been desalinated and shredded beforehand.
Add the shredded dried beef, tomato, smoked paprika, salt, and black pepper to the sauté and let it simmer for a few minutes.
Dica: If desired, you can substitute shredded chicken for the dried beef.
Add the tomato puree to the filling and finish with chopped fresh herbs, mixing well.
Dica: The fresh herbs add flavor and improve the appearance of the filling.
Drain the cooked squash and, while still hot, push it through a potato ricer (or mash with a fork) until you get a smooth puree.
Dica: Cooking the squash in water allows for quicker preparation of the puree.
Incorporate the melted butter, freshly grated nutmeg, and black pepper into the pumpkin puree, tasting and adjusting salt if necessary.
Dica: The butter should be added while the puree is still hot to melt completely.
Grease a baking dish with olive oil or butter and spread the entire dried beef filling evenly on the bottom.
Dica: Greasing the dish prevents the shepherd's pie from sticking when serving.
Cover the filling with an even layer of cream cheese.
Finish by covering everything with the pumpkin puree and, on top, spread the sliced or grated cheese generously.
Dica: Be generous with the layer of cheese for a perfect golden crust.
Bake in a preheated oven until the cheese is nicely browned and bubbly.
Dica: Baking time is quick, just long enough to melt and brown the cheese.
