Ingredients
- Pre-soaked salt cod (ready to use)
- Potatoes
- to taste de Carrots
- to taste de Celery
- to taste de Onion
- Lemon juice
- Olive oil
- Heavy cream
- Mayonnaise
- Salt
- Lemon zest
- Black pepper
- Parsley
- Shoestring potatoes (Batata palha)
Instructions
Cook the pre-soaked salt cod in water until it comes to a boil, then count 10 minutes. Remove the cod. Reserve the cooking water (or clean water) to cook the potatoes.
Dica: Since the salt cod is already pre-soaked and ready, it can go directly into the hot water.
Boil the potatoes in the reserved water until tender.
Dica: Cooking the potatoes in the cod stock (or reserved water) will add flavor.
Flake the cod into fine strands after cooking.
In a large bowl, combine the flaked cod, cooked potatoes, chopped carrots, chopped celery, and diced onion.
Season the mixture by adding lemon juice, olive oil, heavy cream, mayonnaise, salt, lemon zest, black pepper, and chopped parsley.
Transfer the creamy salad to a serving dish, checking the creaminess consistency.
Garnish the dish by topping with shoestring potatoes and additional cod flakes.
