A delicious and special recipe for rice with lentils and caramelized onions, perfect for bringing prosperity on New Year's.

Ingredients
- 1cup de lentils
- drizzle de olive oil

- 1teaspoon de cumin
- 1teaspoon de turmeric
- 1teaspoon de smoked paprika
- 4cups de water
- 5 de onion
- 1tablespoon de brown sugar opcional
- to taste de cilantro/parsley mix (fresh herbs)
Instructions
Soak the cup of lentils in water, completely covering the grains, letting them rest for a minimum of 4 hours.
Dica: Can be soaked the night before.
After soaking, discard the water, drain, and strain the lentils.
In a pot, heat a generous drizzle of olive oil and brown the garlic cloves over low heat, stirring constantly so they don't burn.
Dica: Be careful not to let the garlic burn and become bitter.
Add the rice and the drained lentils to the pot and sauté briefly.
Season with salt, cumin, turmeric, and smoked paprika, sautéing the spices to release flavor.
Dica: Sauté until all the grains are lightly coated.
Add the four cups of previously heated water, mix, and cook over low heat with the pot partially covered for approximately 15 minutes, or until the rice is cooked and the water has evaporated.
Dica: If the water evaporates quickly, add a little more, but gradually to prevent the dish from becoming mushy.
While the rice is cooking, prepare the caramelized onions: in another pot, heat olive oil, add the onions cut into half-moons, salt, and a pinch of brown sugar (optional).
Dica: Sugar speeds up the caramelization process but can be omitted, requiring more time and attention.
Cook the onion over medium-low heat, stirring constantly, until it softens and achieves a deep golden color, stopping the cooking before it starts to taste bitter.
Dica: Lower the heat when the onion starts to caramelize to prevent burning.
As soon as the rice and lentils are done, lightly fluff the mixture with a fork to separate the grains.
Dica: Using a fork helps ensure that the lentils and rice are well distributed.
Cover the pot completely and let the mixture rest for a minimum of 10 minutes to finish evaporating any remaining water and aerate the texture.
Dica: Resting helps make the rice fluffier.
Serve the rice and lentil mixture, finishing with chopped fresh herbs and the caramelized onions on top.
Dica: Use a nice serving dish for better presentation.
