A flavorful farofa made with Chester giblets, perfect for Christmas dinner or as a stuffing.

Ingredients
- Pork lard
- Pepper
- Chester Giblets
- Soy sauce
- Onion
- Garlic
- White wine
- Cornmeal
- Scallions (or chives)
Instructions
Heat the pork lard in a skillet and add the giblets and pepper.
Sauté the ingredients until they are golden brown.
Add the soy sauce, set aside, and in the same pan, sauté the chopped onion and garlic, being generous with the amount of garlic.
Dica: Be generous with the garlic.
Pour in the white wine and scrape the bottom of the pan well to release the flavors.
Dica: Scraping the bottom of the pan helps incorporate flavor.
Let the wine evaporate completely.
Stir in the cornmeal and the reserved giblets, mixing well.
Finish by adding the chopped scallions (or chives).
