A recipe for homemade Caesar dressing that is very easy to make, serving as a base for the traditional Caesar salad or other creative uses.

Ingredients
- 2unit de Egg yolks
- 2finger-widths (approximate measure) de Vegetable oil
- Lemon juice
- Worcestershire sauce
- Anchovies opcional
- Grated garlic
- Grated Parmesan cheese
- Pepper
- Salt
- Ice water
- Cooked chicken breast (for salad) opcional
- Romaine lettuce (for salad)
- Croutons (for salad)
Instructions
Prepare the mayonnaise base by mixing the egg yolks and slowly drizzling in the oil while whisking vigorously until a very thick mayonnaise forms.
Dica: The suggested ratio was two finger-widths of oil for every two yolks.
Add the seasonings that transform the base into Caesar dressing: lemon juice, Worcestershire sauce, grated garlic, and grated Parmesan cheese.
Dica: Anchovies are optional but provide a characteristic salty flavor.
Add pepper and mix all ingredients well.
Taste the dressing and adjust the flavor if necessary, adding a little more Worcestershire sauce or salt, remembering that the dressing tends to be potent and salty.
Dica: Taste constantly, as the ingredients already added (Parmesan, anchovies, Worcestershire sauce) already increase the saltiness.
If you prefer the dressing with a smoother or less thick texture, add a little ice water, being careful not to use too much.
Dica: Ice water changes the consistency, making the dressing more fluid.
To prepare the traditional Caesar salad, combine the finished dressing with romaine lettuce, shredded (or chunked) chicken breast, and croutons. Mix everything gently to coat the ingredients.
Dica: This dressing can also be used to season chicken in wraps or cold pasta salads.
