Recipe for Korean fried chicken, a popular dish for gathering friends or family, following the Korean ritual called 'Chimaek' (chicken and beer).

Ingredients
- Chicken
- 1teaspoon de Garlic
- 2cm de Ginger
- Korean chili pepperSubstitui por: páprica picante, pimenta calabresa
- 1pinch de Salt
- Cornstarch
- Rice starch
- small amount de Oil
- Garlic

- Honey
- Brown sugar
- Gochujang (Korean chili paste)
- Soy sauce
- 1tablespoon de Water
- small amount de Sesame oil
- small amount de Black sesame seeds
- small amount de White sesame seeds
- Green onion
Instructions
Prepare the marinade for the chicken by combining one teaspoon of garlic, approximately 2 cm of grated ginger, Korean chili pepper (or substitutes), and a pinch of salt. Mix well.
Dica: Use the Korean chili pepper sparingly, as more spice will be added in the sauce step.
In a separate bowl, mix the cornstarch and rice starch for the coating.
Season the chicken pieces with the prepared mixture and let them marinate for about 15 to 20 minutes for the flavor to absorb.
Dredge the marinated chicken in the starch mixture.
Begin the deep-frying of the chicken for a short period, about 1 to 2 minutes, just to seal it, without making it fully crispy. Remove from the oil.
Dica: This is the first step of the double fry.
Increase the oil temperature and fry the pieces again until they are visibly crispy and reach the desired color.
Dica: The second fry ensures the special crispiness.
Prepare the sauce by sautéing a small amount of oil, garlic, and ginger. Add ketchup, honey, and brown sugar, followed by Gochujang (Korean chili paste), soy sauce, and one tablespoon of water.
Dica: The sauce is what gives the Korean touch to the recipe.
Finish the sauce by adding a little sesame oil.
Toss the fried chicken in the prepared sauce until all pieces are well coated.
Garnish the dish by sprinkling black and white sesame seeds, along with chopped green onion, before serving.
Dica: Beer traditionally accompanies this dish (Chimaek ritual).
