- 1strand de Butcher's Twine
- 1as needed de Olive Oil
- 1as needed de Grilling Salt (or Coarse Salt)
- 1as needed de Herb Salt
- 1sprig de Rosemary
- 1sprig de Thyme
- 1as needed de Butter
- 1diced de Onion
- 1diced de Carrot
- 1diced de Celery (or Celery Seed)
- 1diced de Strawberry
- 1as needed de Chicken Broth
- 1as needed de Strawberry Preserves
- 1tablespoon de Sugar
- 1glass de Red Wine
- Salt opcional
Instructions
Tie the Ribeye roast with butcher's twine to help it maintain its shape while cooking.
Brush the meat with olive oil and season generously with grilling salt (or coarse salt) and herb salt.
Dica: Optionally, add a sprig of rosemary and a sprig of thyme on top to enhance the aroma during grilling.
Grill the meat until it reaches your desired doneness (medium-rare is suggested as ideal).
Dica: The level of doneness should be adjusted to your personal taste.
In a skillet, melt the butter and sauté the diced onion, carrot, and celery (or celery seed).
Add the diced strawberry, chicken broth, and strawberry preserves to the sautéed mixture.
Add one tablespoon of sugar, mix all the reduction ingredients well, and then pour in the glass of red wine.
Adjust the salt in the reduction, if necessary, and let the sauce simmer on low heat until it thickens considerably.
Dica: The goal is to achieve a very thick glaze.
Remove the meat from the grill and slice the Ribeye at its perfect doneness.
Serve the Ribeye slices topped with the red wine and berry reduction.
