Instructions
Cut the top round roast into large cubes.
Dice the bacon into cubes; smaller cubes are preferable.
Dica: If you cut them smaller, it turns out better.
In a pot, add a small amount of water, the cut meat, bacon, plenty of onion, a good portion of garlic, abundant cumin, salt, bay leaf (optional), and black pepper (optional).
Dica: The exact quantities will be in the description.
Mix all the ingredients well in the pot.
Cover the pressure cooker and cook until the meat is completely falling apart.
Dica: The ideal stage is when the meat shreds easily.
Remove the cooked meat from the pot, shred or mash the entire contents thoroughly.
Return the shredded meat to the pot and reduce the remaining cooking liquid until you achieve the desired consistency.
Serve the Barreado hot with accompaniments like mashed banana and toasted cassava flour, mixing in the cooking juices to form a hearty meal.
Dica: The dish is best when the sauce is incorporated, resulting in a thick 'gororova' (rich slurry).
