Traditional recipe for slow-cooked farm chicken, using lard and natural seasonings for an authentic flavor.

Ingredients
- 1whole de Free-range chicken
- Lemon
- Pork lard
- Chicken fat
- Rosemary
- Annatto seeds
- Garlic
- Onion
- Chili pepper
- Salt
- Water
- Fresh herbs (e.g., parsley/chives)
Instructions
Rub the entire free-range chicken with lemon to season the meat.
Over low heat, melt the pork lard together with the fat removed from the chicken.
Add the rosemary to the melted fat.
Brown the chicken pieces in the prepared fat, removing them and setting them aside after this process.
Add the annatto seeds to the pan and sauté until the fat achieves a deep orange color.
Remove the annatto seeds from the fat.
Sauté the garlic, onion, and chili pepper in the seasoned fat.
Season the reserved chicken with salt and return it to the pan.
Slowly add water until the chicken is completely covered and simmer on low heat until the meat is very tender.
Dica: If necessary, add more water during cooking.
Finish by sprinkling fresh herbs over the farm chicken before serving.
