Instructions
Prepare the onion and dice it into very small pieces. You can use a knife, avoiding the use of a food processor.
Finely chop the parsley. Use a generous amount.
Dica: Parsley is an essential ingredient.
Dice two tomatoes, using the proportion of two tomatoes for every large onion used as a baseline.
Chop the green bell pepper. If you wish to alter the flavor, you can add yellow or red bell peppers, although the traditional version only uses green.
Dica: The green bell pepper is what sets this apart from vinaigrette.
Season the chopped vegetables by squeezing the juice of two limes or adding vinegar.
Add a generous amount of extra virgin olive oil.
Finish seasoning by adding a little salt and a little sugar.
