- Chuleta (Bone-in Strip Loin or NY Strip, Nelore or Angus suggested)
- Salt opcional
- All-purpose seasoning blend
- Soy sauce
- Black pepper
- Toasted Cassava Flour (Farofa)
- Vinaigrette Salsa (Vinagrete)
Instructions
Light the grill and ensure the heat is very high, as the chuleta, being thin, requires intense heat.
Dica: Do not remove the fat cap from the steak.
Prepare the meat: season the chuleta, applying the all-purpose seasoning blend, soy sauce, and black pepper to both sides. If preferred, use only salt.
Dica: Let the seasoned meat rest for 5 to 10 minutes before placing it on the grate.
Grill the chuleta over very high heat, searing quickly on one side and then the other.
Dica: Since the chuleta is thin, the cooking time over high heat should be fast (sear one side and then the other).
Once the desired doneness is reached, remove the steak from the grill and let it rest for about two minutes before serving.
Dica: Resting the meat helps redistribute the juices.
Serve the chuleta accompanied by farofa and vinaigrette salsa.
