Bubu's special recipe for Tapioca Bites, made with cheese and bacon, usually served with guava paste.

Ingredients
- 200g de bacon
- 500g de pearl tapioca
- 1L de whole milk
- 200g de cheese
- 200g de cream cheese
- guava paste opcional
Instructions
Coarsely chop the bacon.
Dica: The size doesn't need to be too small or too large.
Process the chopped bacon until it reaches a sandy consistency, using a hand blender, regular blender, or food processor.
Dica: This can be done in the same blender if the cup still has residue from the previous recipe.
Heat the whole milk until lukewarm (do not let it boil).
Dica: The point is 'lukewarm'.
Fry the processed bacon until very crispy.
Pour all the warm milk at once over the pearl tapioca to hydrate it.
Mix the tapioca and milk well and set aside for the tapioca to absorb the liquid and cool slightly.
Drain the excess grease from the fried bacon and add it to the hydrated tapioca mixture.
Incorporate the cream cheese into the mixture.
Add the shredded cheese to the batter.
Let the mixture rest for 10 minutes.
Dica: After this time, the mixture should be firmer.
Grease a baking pan and line it with plastic wrap.
Transfer the mixture to the greased pan and refrigerate for at least 2 hours, or until very firm.
Dica: It's important that it's very solid so it can be cut.
Remove the mixture from the refrigerator and cut the bites into thick slices (approximately two fingers thick).
Dica: You can cut them to your preferred thickness.
Cut the pieces lengthwise to finish forming the dice shape (the total yield is approximately 70 units).
Deep-fry the bites until golden brown.
Dica: Serve with guava paste.
